½ cup almond flour

½ cup oat flour

2 teaspoons vanilla extract

1 teaspoon baking powder

a pinch of salt

Recipe

Here are the directions to bake these cookies;

Preheat oven to 350 degrees.

Mix 1/2 cup granulated sugar or maple syrup or 2 tablespoons of honey with 1 egg, vanilla extract, and softened butter.

In a separate bowl add all the dry ingredients and baking powder and mix well.

Then add all the dry ingredients to the egg and butter mixture and mix well . It will make a soft cookie dough. If you like you can keep the dough in the fridge for 5-10 minutes. And then scoop into small balls and put on the cookie tray lined with cookie sheet. Flatten the top with your fingers a bit. It makes 18 cookies, ready to go in oven now at 350 degrees.

My husband doesn’t want sprinkles and more sugar, so I made a batch for him without sprinkles. And for the rest of cookies I used sprinkles on top of them and icing adds a little bit more sweetness.

To put sprinkle on top of them:

First take 2 tablespoons of icing sugar or granulated sugar and mix with 2 tablespoons of almond milk and little vanilla essence and mix to form a smooth runny mixture. After the cookies cool down, dip the top part in the icing mixture and sprinkle with colored sprinkles. And now enjoy them with your loved ones!
