Gluten Free Holiday Cookies

For making gluten free cookies or other baking items, I’ve tried many different gluten free flours. But I liked Bob’s Red Mill Gluten Free 1-to-1 Baking Flour, 22-ounce (Pack of 4) best out of different brands. Because it works well with all the baking recipes and is packed neatly into different packets for longer life. So let’s proceed with the recipe and directions on how to make these gluten free holidays cookies.

Here are the ingredients and directions to make these delicious gluten free holidays cookies:

½ cup sugar or 1/4 cup maple syrup or honey

1 large egg

3/4 cup butter

1 cup gluten free flour baking flour 1 on 1( Bob’s Red-mill)

½ cup almond flour

½ cup oat flour

2 teaspoons vanilla extract

1 teaspoon baking powder

a pinch of salt

Here are the directions to bake these cookies;

Preheat oven to 350 degrees.

Mix 1/2 cup granulated sugar or maple syrup or 2 tablespoons of honey with 1 egg, vanilla extract, and softened butter.

In a separate bowl add all the dry ingredients and baking powder and mix well.

Then add all the dry ingredients to the egg and butter mixture and mix well . It will make a soft cookie dough. If you like you can keep the dough in the fridge for 5-10 minutes. And then scoop into small balls and put on the cookie tray lined with cookie sheet. Flatten the top with your fingers a bit. It makes 18 cookies, ready to go in oven now at 350 degrees.

My husband doesn’t want sprinkles and more sugar, so I made a batch for him without sprinkles. And for the rest of cookies I used sprinkles on top of them and icing adds a little bit more sweetness.

To put sprinkle on top of them:

First take 2 tablespoons of icing sugar or granulated sugar and mix with 2 tablespoons of almond milk and little vanilla essence and mix to form a smooth runny mixture. After the cookies cool down, dip the top part in the icing mixture and sprinkle with colored sprinkles. And now enjoy them with your loved ones!
